zozman92 the video you mentioned says shot on R5C so not unusual. Many porn scenes also were shot years ago so maybe they were upscaled and/or shot on lesser cameras. Other issues like photography skill, lighting, bitrate before transcode, other issue with video pipeline possibly. I haven't specifically looked into what bitrate is on 8k vr180 videos on youtube which are using av01 codec on that video and how comparable it would be for h265/hevc videos on DeoVR but YouTube generally leans towards the lower end bitrate if they can get away with it (my impression as a premium subscriber to DeoVR is their video quality is superior to the same videos on YT)
The only other thought I have is that on the user end you could try to increase the resolution in DeoVR to something between 150-200% with Quest Games Optimizer (must have tool to make older Quest 2 games look better) to increase the resolve a bit when playing videos. I don't know what resolution DeoVR runs in on Quest 3 by default but you can override whatever it's running in with QGO, although if you set it too high the menus on SLR may become a bit sluggish.
edit: one other thought. If you aren't a premium subscriber on deovr you don't get highest resolution or bitrate. And there is currently a problem with DeoVR.com that even if you are a premium subscriber it will not always select the highest video quality. You may need to select the highest video quality manually until/if it is fixed (bug? attempt to save bandwidth cost?) Therefore if you were comparing the VRMotion video on YT vs DeoVR.com that could explain the difference.
