Why not just mess with them while watching a video to see what changes? move the sliders to the left, move the sliders to the right and watch how the picture changes. Then "Reset To Default" to go back to normal. You should also be able to "Set As Default" if you find a specific setting that works for you. There is a button on the bottom right of the app and videos, when you can pull up those bottom options, that will re-center your view to directly where you are looking
There are many different headsets, controllers, and other setups.. so more information would always be good.. so people could potentially tell you what buttons or combination of buttons could be used to make these adjustments without needing to go to the actual settings screen. For example, holding both of the two trigger buttons on the right controller of the Quest 2 and likely others will let you move the screen around without having to go mess with the settings menu sliders
