After watching this on Index and Quest 2 I can say sharpness is really good on this video. On the Quest I actually noticed even some slight aliasing behind the bed, which was not there on the Index, maybe the lower resolution and/or worse optics on the Index masked this out.
but...
I think this video was pretty much ideal showing off the enhanced resolution 8k can do, with lots of fine details especially on the bed throughout the whole image and the fact that subject distance is relatively high making it easy using hyperfocal distance.
I do not think this video is really representative for typical VR-porn where the action is much closer to the camera. If you have to focus closer then hyperfocal distance it is at least questionable how much more detail 8k will actually bring. Also the only 30FPS might become a problem, with much more action then in this video.
And finally the FOV in this video is absolutely terrible, nowhere near 180° and not even talking about the 200°+ of the fisheye videos. The real horizontal FOV in this video is maybe 130-140°, actually on the Index you can barely move the head before reaching the black border.
With all this downsides I am not sure if 8k is really a benefit with todays technology, sure it is sharper, but sharpness with the current 5-6k cameras is not really the factor that limits perceived quality the most, and I rather think going for more FOV and higher framerates would be more beneficial until technology is far enough that we can have all at once.
