Personally, I don't really recall it ever working any different than it does now, but I'm not too sure about that.
I suppose you could just "spam" press the recenter button while you are moving your head.
That being said, personally I mostly use a different setting to adjust things:
In the DeoVR settings under Player, there is a setting called Dome Rotation. On my Quest3 I have this bound to Primary Hand Trigger + Primary Index Trigger. While you hold down your Dome Rotation keybind, you can move/rotate your controller to move/rotate the scene very precisely, without having to move your head at all - and not just left/right, but also the pitch and roll.
If you're using a Quest 3, you'll also want to recenter the quest itself first, by holding down the Meta button on your controller for a few seconds, otherwise the dome rotation will be weird/off if your current position/orientation in your room doesn't match the position/orientation you were in the last time you recentered your quest.
